Head hunters know a lot of people, even past and current people you worked with so I assume if anything seems out of place they will search either on the record or off.

Yes, headhunters can find out the real reason you left a job. But there is no government records of your employment unless you worked for the government. Then they would have your records of employment with them. A prospective employer can do a background check on you once you sign the form for them to do so. Most companies use outside companies to obtain this information for them in order to avoid liability issues regarding privacy and just the time it takes to do the checking of information. I would caution you not to lie on an application about education or past employment as that is fraud and a job offer can be withdrawn for it.
